Sole Meuniere Recipe

   Sole meuniere is a light meal that consists of sole, whole or filet, and paired with fresh seasonal vegetables. Furthermore, it is a quick and satisfying lunch that is perfect for any day of the week. It should be noted that the recipe calls for sole, but other types of white fish work just as well.

Serves: 2 ppl

Ingredients

  • 2 Pieces of White Fish Filet
  • 3/4 Cup of All Purpose Flour
  • 4 Tablespoons of Unsalted Butter
  • 1 Teaspoon of Parsley
  • 1 Teaspoon of both Salt and Pepper

Directions

  1. Firstly, place the Flour in a shallow bowl, add the Salt and Pepper and mix thoroughly.
  2. Second, place a saucepan on the stove on medium-high heat and add half the butter, allow to melt.
  3. Next, take a filet and lightly cover in flour, dusting off excess.
  4. When ready, place the filet in the pan, cook on each side for 2-2.5 minutes until golden brown.
  5. Once finished, place filets on paper-towelled plate while you make the brown butter sauce.
  6. Now, in the same pan add the remaining butter and include Parsley. Note that your sauce is ready once golden brown.
  7. Finally, move filets to a plate and spoon your brown butter sauce over each filet.

Important Notes

  • Lastly, many recipes include half a tablespoon of lemon juice to the brown butter sauce – both ways are worth trying.
